Snowball Cake

This weeks recipe is sure to be a favorite.  You should most definitely be ready to pass it along to all your friends because I’m sure they will be asking for the recipe after the first bite.  One of best qualities of this cake is that its super light.  You could practically eat half the cake and not feel like you just ate a sugar bomb.  Believe it or not its not that bad for you either. Its a cute take-a-long for any winter party (because of the name of course) but it is out of this world when made with the fresh picked strawberries of the summer. Winter or summer enjoy!
Snowball Cake


2 or 2 1/2 store bought angel food cakes
1 large containers of strawberries
3 small containers  of cool whip
2 small packages of strawberry Jello
Take cake and break up into pieces.  Don't stress too much about the size of the pieces....big or small it will taste great in the end.
Make your Jello as instructed on the box leaving out 1/2 cup of the boiling water. (The 1/2 cup is for both boxes combined.  Be sure not to take out 1/2 cup for each box.)
Add strawberries to Jello and let sit in the fridge for an hour or until it starts to gel.
Stir in one small container of cool whip into Jello mixture.
Take a large bowl and line it with foil. (This is for easy removal later.  Important!!! Do not skip!)
Start with a layer of angel food cake and then a layer of jello mixture.
Repeat until gone.
Cover and let sit over night in fridge.
When ready to serve place serving plate on top of bowl, flip and then remove foil.
Frost with remaining cool whip.
Feel free to add a couple sliced strawberries around the bottom for decoration.
**Hint - For a big party I double the recipe and put it into the biggest bowl I have. It makes a very impressive snowball.
**Hint - If you are left with any remaining Jello mixture just toss it into a bowl and put it into the fridge.  It’s a tasty dessert all on its own.
