Rainbow Cake

Rainbow Cake

What better to generate some birthday excitement than to turn your plain old white cake into rainbow cake! It may take a little more time but its super easy and the look on everyones face when you cut into the cake or when they take their first cupcake bite is priceless!
You will need:

1 box of white boxed cake mix
4 egg whites
1/3 cup vegetable oil
1 oz vanilla instant pudding and pie filling
1 1/4 cup milk
food coloring: red, orange, yellow, green, blue and purple (sorry Indigo but I had to exclude you)
Combine all ingredients and mix for 30 seconds on low speed. Mix for another 2 minutes on medium speed.
Divide cake batter evenly into 6 separate bowls.
Dye each bowl of batter a different color. 
Layer colors into muffin tins starting with purple on the bottom, next blue, green,yellow, orange and top with red.
Bake 5 minutes short from what is directed on box.  
Check for doneness with toothpick.  If toothpick comes out clean your good to go. 
Cool completely and frost.

Tip: I made mine using 8 inch square baking pans.  To do this make three batches of cake batter.

Divide and color into 6 separate bowls.  I baked two colors in 3 separate cake pans.  One was blue and purple, the next green and yellow and the third was red and orange.  

Spread one color at the bottom of the pan.  When its completely spread cover with second color of batter and spread carefully making sure not to mix the colors as much as possible. 

Bake as directed minus the 5 minutes. After all the cakes are baked and cooled. 

Stack according to the colors of the rainbow frosting between each cake. Remember Roy G. Biv, purple on the bottom then blue, green, yellow, orange and red. 
Tip: I used neon food coloring for the purple and blue and the colors turned out great!
