Popovers

I came across this recipe the other night and couldn't wait to try it.  It not only looked yummy but I thought the kids would love to watch them pop looking through the oven door.  I am happy to say I was right on both counts.  I got a two thumbs up from the entire family and the kids loved watching them POP!  This would be a great addition to any Christmas dinner.  Not to mention they look pretty impressive. Just don't tell anyone how easy they are to make!!  Enjoy!!!!
Popovers


3 Tbsp melted butter
2 eggs
1 cup milk, warmed for 30 seconds in microwave before adding
1 cup all-purpose flour
1 tsp kosher salt
Directions
Preheat oven to 400 degrees F.
Using a pastry brush, coat 8 muffin cups with 1 Tbsp of butter and put the tin in the oven for 5 minutes.
Meanwhile, mix the eggs in a blender until light yellow.
Add the warm milk and blend.
Add the flour, salt and remaining 2 Tbsp of butter and blend until smooth.
Pour the batter into the warmed muffin tin and return it to the oven to bake until golden brown, about 25 to 30 minutes.
Remove from oven and serve warm.
