Chicken Pot Pie

Below is the recipe for my favorite chicken pot pie but this week feel free to change up the chicken with turkey and instead of frozen veggies feel free to mix in your left over veggies from Thanksgiving dinner.  This recipe is so easy and a great weeknight meal.  Easy to whip up but tastes like you slaved all day.

Chicken Pot Pie
1 store bought roasted chicken, meat removed and cut into bite sized pieces
1 pkg (15 oz) refrigerated pie crust
1/4 cup butter
1 large onion, finely chopped
3 Tbsp all-purpose flour
1 1/2 cups chicken broth
1/2 cup milk or heavy cream
1 bag (16-20 oz) frozen mixed veggies
3/4 tsp salt
1/4 tsp black pepper
1 egg yolk
1 Tbsp water
Preheat oven to 425 degrees.
Fit one pie crust into a 9 inch pie plate and set aside.
Melt butter in a large saucepan over medium heat. Add onion and cook, stirring for 3 minutes.  
Whisk in the flour and cook, stirring for 2 minutes.
Add broth and milk; whisk until thickened, 3-4 minutes longer.
Remove from heat; stir in chicken, frozen veggies, salt and pepper.


Spoon filling into prepared pie plate.
Place remaining piecrust on top, crimp edges with a fork and cut four small slits in top crust to let steam escape.
Beat egg yolk and water in a small bowl. Brush the pastry with egg mixture.


Place pie on baking sheet and bake until pie crust is golden and filling is bubbly, about 45 minutes.
Let stand for 10 minutes before serving.
Tip: To save even more time use a prepared pie crust that comes in a foil pan. These are found in the frozen food section of the grocery store. They usually come in a two pack so have the second crust thaw as you are preparing the recipe. When your pot pie is ready to be covered invert remaining  pie crust and place on top. Crimp, vent and brush as before.


Tip: If your family is picky about their veggies feel free to switch up the mixed veggies with only frozen peas and carrots or whatever combination your family enjoys.
Tip:  Make mini pot pies using cup cake pans.  Cut out dough to fit pans to create a cute personal sized pot pie.  Just remember you may need an extra box of pie crust to make up for scrape.
