Lasagna Cups




Lasagna Cups

This recipe is a great quick dinner or appetizer. Serve one per person for an appetizer or two or three for a dinner. Kids love them because they can just pick them up and dig in (Its an easy way to sneak in some spinach too.) This is a great recipe to get the kids involved in. My daughter had a blast making them.

(1) Pkg Wonton Wrappers
(1) lb Ricotta Cheese
1/4 cup Grated Parmesan Cheese
(1) Egg
(1) Pkg Shredded Mozzarella Cheese (2 cups)
(1) cup Chopped Spinach
(3) cups of Your Favorite Jar or Homemade Marinara or Meat Sauce
Non-stick Cooking Spray

Preheat oven to 375 degrees

Spray cupcake pan with non-stick cooking spray

Line each tin with one Wonton wrapper pressing them to the bottom of the tin.

Mix together ricotta, Parmesan cheese and egg. Add salt and pepper to taste.

Drop 1 heaping tsp of ricotta mixture into each tin.

Layer on top 1 tsp sauce followed by a pinch of spinach and a pinch of mozzarella. Cover with another Wonton wrapper and press down gently. (Try to turn each wonton wrapper just a bit to stagger the edges. This will give it a prettier flower like look in the end.)

Repeat two more times.

After placing your last Wonton wrapper on top. Cover each cup with approximitly 1 tbsp of sauce followed by a sprinkle of mozzarella cheese.

Bake for 15-20 min or until edges of wrappers are brown and crispy.

Let cool for about 5 minutes before removing.
